FIELD: food industry.
SUBSTANCE: invention relates to food industry. Method for the manufacture of a confectionary product from dried fruits and nuts, coated with a food layer of sprinkling and packed in a capsule, involves preparation of raw materials containing dried fruits and nuts, including rejection, weighing, washing dried fruits in running water, removing bones and/or fruit stems; and rejection, drying and grinding of nuts. Dried fruits are soaked in separate containers at water temperature of 30–40 °C for 15–40 minutes, dried, milled to produce mass by means of a blender to fraction size of 2–4 mm. Obtained mass is stirred, natural lemon juice, crushed nuts and, if necessary, coconut chips are added to the mass; confectionary products are manually moulded from produced mass, each confectionary product is shaped, each confectionary product is dusted in dusting, the confectionary product is given a final shape and the ready confectionary product is packaged into a capsule according to the product size. At the end, the finished confectionery product is cooled, packed in a capsule at a temperature of +2 °C to +8 °C for at least two hours.
EFFECT: invention ensures improvement of taste properties of the ready confectionary product, extension of the ready confectionary products storage life, convenience of the ready confectionary product storage, as well as expansion of the range of dried fruits and nuts confectionery products.
