FIELD: food industry.
SUBSTANCE: invention relates to confectionary industry and may be used in production of sweets based on dried fruits. Method for production of a confectionary product based on dried fruits involves soaking dried fruits of unabi dates and soyagi raisins, washing, drying till moisture content is 20 %, extraction of bones from dates, washing, drying and frying of peeled almonds. Then one performs weighing and mixing fruits of unabi dates, soyagi raisins and almonds in ratio of 1.8:0.8:0.8–2.0:1.0:1.0. Then they are crushed to homogeneous mass with particle size in range of 0.6–1.0 mm. Then the obtained mixture is mixed with milled fresh lemon mint and grated lime peel with particle size in range of 0.2–0.3 mm, taken in equal amounts at rate of 0.23-0.27% of the mixture weight, and lime juice is added in amount of 0.47–0.52 % to the mixture weight. After that, a spherical product with diameter of 22–30 mm is formed from the obtained mixture with application of cocoa nibs with particle size of 0.1–0.2 mm on its surface until a layer with thickness of 0.2–0.5 mm is formed. Then the product is dried at 45–50 °C for 4–8 hours to residual moisture content of 20–25 %, cooled to 19–22 °C and delivered for packaging.
EFFECT: invention is aimed at improving the taste of sweets by preserving the natural properties of dried fruits and fillers in them, ensuring stability of quality, improved presentation, longer storage life, as well as wider range of confectionary products for healthy nutrition.
