SUBSTANCE: group of inventions relates to a yeast strain for bread production and its use. The yeast strain for bread production is proposed, deposited on May 19, 2016 in the Collection Nationale de Cultures de Microorganismes (CNCM) under the number I-5088 in accordance with the Budapest Treaty. The specified strain is used in the production of yeast milk and bread dough, as well as the specified strain is used in a method for the bread production.
EFFECT: yeast strain has improved fermenting capability.
