SUBSTANCE: invention relates to a method for manufacturing collagen shells containing one or several flavoring ingredients included in collagen. A method for manufacturing an edible collagen tubular shell for meat products is proposed, which provides for the introduction of a flavoring ingredient into the collagen shell, including stages of: (a) separation of the corium layer from the front layer of the animal skin; and (b) processing of the corium layer for the manufacture of a collagen shell. In this case, the stage of processing of the corium layer includes stages of: (i) crushing the corium layer of one or several animal skins and dispersing the crushed corium in water; (ii) mixing crushed corium material dispersed in water with the dispersion of cellulose and acid to obtain collagen gel; (iii) adding a flavoring ingredient to collagen gel; and (iv) extruding flavored collagen gel to form a collagen shell, which is dried, moistened to increase the moisture content in the collagen shell and corrugated. During the corrugation, the flavoring ingredient is additionally added to the collagen shell from the inside through the mandrel, and the flavoring ingredient is a water-soluble smoky flavoring ingredient.
EFFECT: invention provides flavor and aroma to the collagen shell using a smoky flavor included in collagen to impart an improved smoked taste and aroma to a meat product stuffed into the collagen shell.
