FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to manufacture of collagen food film for meat products casing. The food film is made of collagen-containing raw materials of animal origin and contains CO2-extract of nutmeg or CO2-extract of cloves or CO2-extract of allspice or any their combinations in an amount of 5 - 10% of the weight of collagen contained in the film.
EFFECT: invention ensures manufacture of collagen food film of antimicrobial action with increased storage life of the ready product, the product shrinkage reduction; the method ensures imparting a spice aroma to the product, such aroma stable during storage.
