FIELD: food industry.

SUBSTANCE: method for producing phosphorylated starch includes starch treatment with sodium tripolyphosphate. A starch sample suspension of 50 g is dispersed in distilled water by mixing for 60 min at a temperature of 25°C. Then, an aqueous solution of sodium tripolyphosphate of 2 ml is introduced to the mixed suspension by drops, the pH value is brought to 6 by HCl solution of 0.5 n, and the solution is mixed for an hour. After the sedimentation, the suspension is washed from acid by distilled water for four times and once by ethanol. The supernatant suspension is centrifuged using a desktop centrifuge at 7,000 rpm for a minute, and the resulting precipitation is dried to a constant mass at 40°C.

EFFECT: invention is aimed at the development of phosphorylated starch with low glycemic index of products, which characterizes gradual release of glucose for a long time.
