SUBSTANCE: invention relates to a method for cleaning tableware when washing by hand. After mechanical removal of food residues, dishes are washed in water. In the first section of the bath, a preliminary mechanical washing is carried out with the addition of detergents. Then pre-washed dishes from the first section of the bath are transferred to the second section in a metal mesh-dryer. The section is filled with water with the addition of detergents in an amount two times less than in the first section of the bath, to the level of complete immersion of the dishes, and ultrasonic irradiation with a frequency of 20-60 kHz is carried out for 10 minutes. Then the grid with dishes is transferred to the third section of the bath. Rinse with a flexible hose with a shower head with hot running water at a temperature not lower than 40°C. The mesh is then moved to the fourth section of the tub for final rinsing using ultrasound. To do this, the bath is filled with water at a temperature to the level of complete immersion of the dishes and repeated ultrasonic irradiation of the dishes with a frequency of 20-60 kHz for 10 minutes is carried out. After the grid with dishes is transferred to the third section of the bath. Then rinsed with a flexible hose with a shower head with hot running water at a temperature of at least 40°C. Then the dishes are dried.

EFFECT: increasing the degree of cleaning of dishes by removing residual amounts of surfactants (RAS) and micellized RAS, the rejection of disinfectants, and therefore their guaranteed non-ingestion with food into the body and reducing the chemical load on wastewater.
