SUBSTANCE: invention relates to the food industry and can be used in the production of food concentrates, semi-finished flour products for the subsequent preparation of dishes in the form of fritters. A mixture for baking fritters is proposed, which contains carrot tops, onions, table salt, baking soda, buckwheat flour and water, with the following ratio of initial prescription components, wt.%: carrot tops 20–40; onions 17–20; edible salt 0.3–0.8; baking soda 2–4; buckwheat flour 20–30; water 15–30.

EFFECT: invention is aimed at increasing the nutritional and biological value of the product when combined in a mixture of carrot tops, onions and buckwheat flour containing vitamins, minerals and vegetable proteins.
