FIELD: nutritional compositions.

SUBSTANCE: present invention relates to a method for obtaining a nutritional composition containing one or more polyunsaturated fatty acids with a long chain. The method includes: (i) obtaining a double emulsion (O/W/O emulsion) of the specified one or more polyunsaturated fatty acids with a long chain characterized by an internal oil phase containing the specified one or more polyunsaturated fatty acids with a long chain dispersed in an aqueous phase containing at least one emulsifier, which, in in turn, it is dispersed in an external oil phase containing at least one emulsifier, and the dispersion of the specified double emulsion in the edible oil stream, and moreover, the production of a double emulsion includes a mixing stage with a high shear force; (ii) mixing of a double emulsion in a stream of edible oil with an aqueous phase and (iii) homogenization of the double emulsion mixture from stage (ii) with the formation of a nutritional composition. The nutritional composition obtained by the above method and the use of the nutritional composition in a nutritional supplement or infant formula are also proposed.

EFFECT: proposed method based on the use of a double emulsion leads to better stabilization of fatty acids and prevents or minimizes the oxidation of fatty acids during processing, for example, at high temperatures.
