SUBSTANCE: present invention relates to a method of producing an oil-in-water (O/W) emulsion, comprising the following steps: a) obtaining an oil phase and an aqueous phase; b) premixing the oil phase and the aqueous phase to obtain an O/W pre-emulsion, and c) homogenising the O/W pre-emulsion using at least one countercurrent disperser to obtain an O/W emulsion.
EFFECT: disclosed are a method of producing an oil-in-water emulsion, an oil-in-water emulsion and an apparatus for producing an oil-in-water emulsion.
