FIELD: food industry.
SUBSTANCE: proposed method for the preparation of an aerated edible food composition with inclusions distributed in it includes the provision of a device for feeding edible inclusions simultaneously with aerated edible fluid to substrate. Moreover, the device including a nozzle with a double line contains an outer line passing from the first input to an outer output having an outer outlet; and an inner line passing from the second input to an inner output having an inner outlet. In the implementation of the method, the outer line is connected via fluid to the first source feeding, optionally continuously, aerated edible fluid. Moreover, the inner line is connected via fluid to the second source feeding, optionally continuously, edible inclusions. Aerated edible fluid is fed from the first source via the outer line with the output from the outer outlet to form an outer fluid flow directed to substrate. Inclusions are fed via the inner line to the output from the inner outlet to form an inner inclusion flow directed to substrate. The inner inclusion flow and the outer aerated fluid flow are simultaneously fed to substrate, where the outer fluid flow at least partially surrounds the inner inclusion flow in their movement towards substrate, and where flows are mixed on substrate to form a mixture on it. Then, the mixture on substrate is optionally cured to form an aerated food composition with inclusions distributed in it. Moreover, the aerated edible food composition is a chocolate product or chocolate.
EFFECT: invention provides for introduction of inclusions into aerated compositions during a single feeding stage.
