SUBSTANCE: method for the production of an aerated food composition containing inclusions distributed in solid material includes obtaining a device suitable for use in the method according to the present invention, containing at least one input line for transportation of corresponding fluid and/or inclusions to a technological chamber; a technological chamber containing a density regulation means, which is an aeration means made with the possibility of changing a density of a fluid composition and injecting gas into the fluid composition optionally containing inclusions. Moreover, the control of the density regulation means is carried out using a control means. The control of the aeration means is carried out using the control means for controlling the amount of gas supplied to the fluid composition. Inclusions and/or multiple inclusions are added to a receiving tank for inclusions, and/or the food fluid composition, which is a solid material precursor, is added to a receiving vessel for fluid. At least one input parameter is generated by the fluid composition and/or an inclusion(s), optionally using at least one measuring means, and optionally before fluid and/or inclusions are in the technological chamber. Moreover, at least one input parameter is used for calculating a density of the inclusion (inclusions) and/or a density of the fluid composition, which will be transported to the technological chamber. Then, the inclusion (inclusions) and/or the fluid composition is transported to the technological chamber. At least one controlling parameter is generated for controlling the functioning of the density regulation means in the technological chamber and/or transportation of the fluid composition and/or inclusions to the technological chamber. The density of the fluid composition is regulated in the technological chamber, using at least one controlling parameter for controlling the density regulation means. Moreover, the controlling parameter is calculated by at least one input parameter, so that the density regulation means will provide the compliance of the density of the inclusion (inclusions) added and/or introduced in it. Then, the fluid composition with the inclusion(s) distributed in it is solidified to form a food product containing solid material with the inclusion(s) distributed in it, optionally with a predetermined pattern. The fluid edible composition is chocolate or a chocolate composite product. A micro-aerated product is also proposed, obtained by the specified method, with an average size of gas bubbles of 100 mcm or less, which contains inclusions.
EFFECT: invention allows for obtaining an aerated product with evenly distributed inclusions.
