FIELD: food industry.
SUBSTANCE: invention relates to fat-and-oil and food industry. Method of producing an aerated food composition containing inclusions distributed therein includes steps of: a) providing a device for dispensing edible inclusions, wherein the device comprises a pressure pump and is configured to operate under pressure; b) feeding inclusions into pressure pump; c) feeding the fluid aerated food composition into an injection pump downstream of the inclusions and d) mixing the inclusions with the fluid aerated food composition in the injection pump to form an aerated food composition containing inclusions distributed therein, wherein the fluid medium is aerated to degree of 1 to 20% of gas by volume, wherein the aerated food composition is a chocolate or a chocolate composite product. Food composition obtained using the above method, which contains inclusions distributed therein, which contains gas bubbles micro-aerated therein, having an average size of less than 100 mcm, which contains inclusions uniformly distributed in it, which is a moulded article, wherein the food composition is a chocolate or a chocolate composite product. Device for producing an aerated food composition containing inclusions distributed therein, which comprises a device for dosing edible inclusions, wherein the device comprises a delivery pump and is configured to operate under increased pressure in combination with a device for aerating the food composition, wherein the delivery pump is a centrifugal vane pump containing 20 blades or less, wherein the inclusions are fed into the space between the pump blades, wherein when inclusions reach the fluid aerated food composition, the blades are pulled back, wherein the aerated food composition is a chocolate or a chocolate composite product.
EFFECT: invention enables to provide a method of producing an aerated chocolate product with inclusions, wherein the inclusions are distributed better inside the chocolate product, and addition of inclusions does not disturb the aeration process of the article and prevents formation of undesirable air bubbles which could lead to formation of uncoated inclusions.
