The method for the production of meat bread involves the preparation of meat raw materials - white turkey fillet, red turkey fillet, low-fat trimmed pork, grinding and salting using nitrite salt and edible salt. Next, meat raw materials are ripened, cuttered with the addition of ice, pork back fat, 4x4 mm, hydrated water in a mass ratio of 9: 1 kelp, black food albumin, granulated sugar or glucose, black or white ground pepper. Then molding, baking and cooling are carried out, while meat bread is prepared with the following ratio of initial components: main raw material, kg per 100 kg: white turkey fillet - 15, red turkey fillet - 20, trimmed low-fat pork - 39, pork back fat, 4x4 mm - 25, black food albumin - 1; spices and materials, g per 100 kg of unsalted raw materials: nitrite salt - 1340, table salt - 1160, dry kelp - 3, water for hydration of kelp - 27, granulated sugar or glucose - 110, black pepper or ground white pepper - 85 .

EFFECT: invention makes it possible to obtain a product with increased nutritional and biological value, as well as with improved organoleptic and functional-technological indicators.
