SUBSTANCE: invention relates to the food industry and can be used in producing baked products with high nutritional and biological value. Composition of a mixture for producing wheat baked products includes wheat flour, soy okara, sunflower seeds, pumpkin seeds, sesame seeds, and calcium lactate at the following ratio of components, % wt.: wheat flour 70.0, soy okara 10.0, sunflower seeds 4.0, pumpkin seeds 10.0, sesame seeds 5.5, calcium lactate 0.5.
EFFECT: improvement in the quality of the composition of a mixture for producing wheat baked products due to the increase in the biological value and balanced chemical composition, as well as production of baked products with high organoleptic and physico-chemical properties.
