SUBSTANCE: method for production of bakery products based on a mixture of high-grade bakery wheat flour and gram flour involves kneading dough by mixing a mixture of flour and recipe components, dough fermentation, dough pieces molding, finishing, proofing, baking and cooling of products. Flour mixture contains high-grade bakery wheat flour in amount of 75.0–95.0 wt.% and gram flour in amount of 5.0–25.0 wt.%. Recipe components are used in the following ratio, wt.% of total quantity of high-grade bakery wheat flour and gram flour: pressed bakery yeast—1.5–6.0, edible salt—1.0–2.0, white sugar—6.0–15.0, sunflower oil—3.0–7.0, camelina oil—3.0–7.0, drinking milk—7.0–13.0, drinking water—as per calculation.

EFFECT: invention allows to produce products with improved organoleptic indices and increased biological value.
