SUBSTANCE: invention relates to the food industry and can be used in producing baked products with high nutritional and biological value. Composition of the mixture for producing wheat and rye baked products includes rye flour, wheat flour, soy okara, pumpkin seeds, onion powder, and mustard powder at the following ratio of components, % wt.: wheat flour 74.0, rye flour 4.0, soy okara 8.0, pumpkin seeds 9.2, onion powder 4.6, mustard powder 0.2.
EFFECT: production of a composition of a mixture for producing wheat and rye baked products with high nutritional and biological value, a balanced ratio of proteins, fats, and carbohydrates, high content of minerals, and improved organoleptic and physico-chemical properties.
