FIELD: food industry.
SUBSTANCE: invention relates to the food industry, to the confectionery industry thereof, namely, to the production of wafers with fatty filling. Composition for preparing wafers with fatty filling includes general purpose wheat flour, coconut oil, whey powder, maltodextrin, whole powdered milk, corn starch, liquid malt extract, whole grain rye flour, potato starch, lecithin, high-oleic vegetable oil, dry curd, inulin, salt, flavouring agents, ammonium carbonate, soda, a vitamin and mineral mixture, citric acid, a biologically active food additive, and complex food additive. The components of the composition are therein taken in the following initial ratio, wt.%: general purpose wheat flour 25.0 to 35.0, coconut oil 15.0 to 30.0, whey powder 8.0 to 21.0, maltodextrin 4.0 to 13.0, whole powdered milk 3.0 to 13.0, corn starch 2.0 to 8.0, liquid malt extract 2.0 to 7.0, whole grain rye flour 2.0 to 6.0, potato starch 1.0 to 5.0, lecithin 0.3 to 3.0, high-oleic vegetable oil 0.2 to 2.0, dry curd 0.1 to 2.0, inulin 0.1 to 2.0, salt 0.1 to 2.0, flavouring agents 0.1 to 4.0, ammonium carbonate 0.1 to 1.9, soda 0.002 to 1.0, vitamin and mineral mixture 0.002 to 1.0, citric acid 0.001 to 1.0, biologically active food additive 0.0002 to 0.2, complex food additive 0.5 to 2.0.
EFFECT: production of a finished product with high biological and nutritional value and with enhanced taste qualities.
