FIELD: fat and oil industry.
SUBSTANCE: invention relates to the fat and oil industry, in particular, to the production of mayonnaise sauces. Mayonnaise sauce containing refined deodorised sunflower oil, granulated sugar, table salt, mustard powder, egg powder, sodium bicarbonate, and sodium benzoate, additionally contains a solution of low-etherified pectin, and whey protein microparticulate, at the following ratio of the initial components, wt.%: whey protein microparticulate 48.7, refined deodorised sunflower oil 32.7, solution of low-etherified pectin with a 5% mass fraction of pectin 10, egg powder 5, granulated sugar 1.5, table salt 1.1, mustard powder 0.75, sodium benzoate 0.2, sodium bicarbonate 0.05.
EFFECT: invention increases the nutritional and biological value, improves the organoleptic properties, and raises the storage stability of the emulsion.
