FIELD: food industry.
SUBSTANCE: invention relates to the fat and oil industry. Mayonnaise dressing, including refined deodorised vegetable oil, egg yolk, sugar sand, culinary salt, mustard powder, acetic acid - 70 %, additionally contains stone bramble puree. All initial components are taken at the following content, wt. %: stone bramble puree - 13, deodorized refined vegetable oil - 48.5, egg yolk - 18, sugar sand - 2.5, culinary salt - 1, mustard powder - 0.7, 70 % acetic acid - 0.9, water - balance.
EFFECT: invention allows to expand the range of mayonnaise sauces, enhance the product biological value due to introduction of a natural berry component into the formula, as well as produce a product with high organoleptic properties.
