SUBSTANCE: invention relates to the food industry. A method for obtaining tomato powder is proposed, according to which tomatoes are inspected, washed, removed from the stalk, cut into slices weighing from 0.014 to 0.022 kg, evenly placed on the surface of the tray, moreover, in one layer and at a distance relative to each other ranging from 0 .5 to 1.5 cm, and place the tray in an oven with built-in ceramic infrared heaters, in the chamber of which the operating temperature is set in the range from 65 to 75°C. Tomatoes are kept at this temperature for 4.0 to 4.5 hours, after which the operating temperature in the chamber is set in the range from 30 to 40°C and the tomatoes are kept at this temperature for 2.5 to 3.0 hours. After this, the tray is removed from the chamber of the drying cabinet, the tomatoes are removed from the tray, crushed in a mill until a powder mass is obtained.

EFFECT: invention makes it possible to obtain a food product with improved nutritional value and to preserve the vitamin composition of a fresh tomato.
