FIELD: food industry.
SUBSTANCE: invention relates to food industry. According to the proposed method tomatoes are cut into 1-4 mm thick segments and placed on a flat needle carrier. One dries segments at atmospheric pressure with bilateral infrared radiation, density of the heat flow on one side of the segment E=0.92-1.99 kW/m2 and length of the infrared rays wave corresponding to the maximal emissive ability of the infrared emitters λ=1.41-1.67 mcm. Tomatoes are dried till moisture content in the finished product is 5 - 6%.
EFFECT: method allows to increase the finished product yield.
