FIELD: food industry.
SUBSTANCE: vegetal raw material food powders production method envisages IR-drying of milled tomatoes and beet-roots in the "heating-cooling" pulse mode corresponding whereto is irradiation time amounting to 7 - 11 sec, cooling time amounting to 14 - 22 sec, specific energy flux density amounting to 12 - 15 kW/m 2 until the limit temperature 55 - 65°C is reached. The radiation source is represented by KGT lamps with IR radiation wavelength band equal to 1.2-2.4 mcm. Then dried beet-roots and tomatoes are milled into particles sized 146 mcm in the flow-type roll planetary mill.
EFFECT: method ensures tomatoes and beet-roots moisture content reduction, increase of lycopene concentration in dried tomatoes and betaine concentration in dried beet-roots and powders nutritive value and organoleptic properties preservation.
