FIELD: food industry.
SUBSTANCE: invention relates to food industry and may be used as a semi-product in preservation, bakery and confectionary industry. Powdery biologically active additive contains a mixture of grape pomace powder, tomato pomace powder and powder of milled broccoli inflorescences. Powders are obtained by drying to moisture content of 6-8% in a dryer with infrared radiation at temperature of 35-45°C and subsequent grinding to 0.2 mm. Components of the biologically active additive are used at the following ratio, wt. %: grape pomace powder – 45-55, tomato pomace powder – 20-30 and powder from milled broccoli inflorescences – 15-35.
EFFECT: invention enables to obtain a biologically active food additive with high content of resveratrol, pectin, polyphenol and mineral substances, anthocyanins, vitamins E, PP, K, indole-3-carbinol.
