FIELD: poultry.
SUBSTANCE: invention relates to the processing of poultry bursa of Fabricius. A method for processing poultry bursa of Fabricius is proposed, which includes the use of raw materials in the form of bursa taken from poultry at slaughter, while the raw material is frozen at a temperature of -4 to -5°C and kept for 4-7 days, then, without grinding, they are laid in an even layer with a height 3-6 cm in a special dish with a perforated bottom - a steamer for a microwave oven, which is placed in the working chamber of a microwave oven with a frequency of 2450±50 MHz and heated to a temperature not exceeding 60°C with microwave processing cycles, during the next cycle of microwave processing first, a concentrated natural liquid phase is isolated, which is separated by gravity, the collected liquid fractions are combined, and the total volume of the liquid obtained is from 25 to 60% of the initial mass of the raw material, after which the microwave treatment is completed to obtain the remaining dehydrated mass of the raw material. At the same time, the dehydrated mass of raw materials remaining after microwave treatment is dried, crushed, checked for quality and used as feed protein immunostimulating additives for birds and animals. The resulting liquid phase is cooled to room temperature and mixed with a dilution medium in the form of a 0.9% sodium chloride solution in a ratio of 1:4 to 1:5.
EFFECT: invention provides for the development of a method that allows to reduce the number of technological operations and the total time of obtaining, while maintaining quality and reducing overall losses.
