SUBSTANCE: invention relates to the dairy industry. The creamy dessert includes cream 20% fat in the amount of 70.5%, sweetener in the form of Jerusalem artichoke syrup with blueberries in the amount of 12.6%, gelatin is used as a structurant in the form of a 1% aqueous solution in the amount of 0.5%, a starter consisting of Bifidobacterium bifidum, Bifidobacterium longum, Lactobacillus casei, Streptococcus thermophiles in the amount of 5%, vegetable filler in the form of sublimated cloudberries in the amount of 2.5% and water in the amount of 8.9%. The content of the initial components is expressed in wt.%.
EFFECT: invention makes it possible to obtain a product having a high biological and nutritional value, high organoleptic characteristics, functional and preventive properties.
