FIELD: fat and oil industry.
SUBSTANCE: the method for obtaining food phospholipid product is proposed that includes five stages of mixing crude plant phospholipids with an organic solvent, phase separation into a solution of neutral lipids in an organic solvent and phospholipids under vacuum at every stage and subsequent vacuum drying of phospholipids; moreover, before the first mixing stage crude plant phospholipids at the temperature of 35-40°C are treated with a pulsed electric field with the strength of 6-7 kV/cm, the number of single impulses of 72 000 for 7-9 min., at the first stage crude plant phospholipids treated with pulsed electric field and organic solvent are mixed at a ratio of crude plant phospholipids – organic solvent (1:6)÷(1:7) (by mass) by intensive mixing for 5-7 min., and after the second, third, fourth and fifth stages of mixing phospholipids and organic solvent the resulting mixture is treated with a pulsed electric field with the strength of 5 kV/cm. and the number of single impulses of 16 800 for 1-2 min.
EFFECT: increase in the output of the target product and its higher quality.
