FIELD: food industry.
SUBSTANCE: invention relates to food industry. The method for production of a fat-and-oil phospholipid product involves: heating and mixing of vegetable phospholipid concentrates with an organic solvent. Phases separation into a solution of neutral lipids in the organic solvent and phospholipids. Phospholipids treatment with an organic solvent containing citric acid and phospholipids drying. Additionally the organic solvent for treatment contains monosubstituted sodium citrate at a ratio of citric acid to monosubstituted sodium citrate (1:1)÷(1:3). The mixture of citric acid and the monosubstituted sodium citrate is taken in an amount of 0.15 g - 0.40 g per 1 kg of phospholipids while the ratio of phospholipids to the organic solvent is (1:3)÷(1:5). The organic solvent containing citric acid and monosubstituted sodium citrate is preliminary treated in a zone of permanent electromagnetic field with a magnetic induction of 0.2-0.8 T.
EFFECT: invention allows to produce a high quality fat-and-oil phospholipid product.
