FIELD: food industry. SUBSTANCE: oil-and-fat product is vegetable phospholipids prepared by fourfold mixing of preliminary heated phosphatide concentrates or food vegetable phospholipids with organic solvent. Solution of mixture of citric and succinic acids in flooded acetone taken in the amount of 1-2.5% to phospholipids mass is added into solvent before 3rd mixing. Ratio of acids in mixture is (1:1)-(3:1). Phases are separated into solution of neutral lipids in solvent and phospholipids with further their drying.
