FIELD: food industry.
SUBSTANCE: invention relates to the food industry, in particular to the production of natural food additives, and can be used to color food products, for example flour confectionery, dishes with a fat phase in yellow and orange and give them the taste and aroma of sea buckthorn. The method for preparing a food additive includes grinding of carotenoid vegetable raw materials with subsequent extraction with an organic solvent, while sea buckthorn is used as a carotenoid vegetable raw material, the berries of which are thawed, crushed together with the released liquid. Next, leached cossettes are separated and pulp is homogenized to a puree state, which is extracted with an organic solvent. Sunflower oil is used as an organic solvent, with a mass ratio of 1:1. Extraction is carried out in a water bath at a temperature of 35-55°C for 7-13 minutes.
EFFECT: invention makes it possible to obtain a flavoring additive with coloring properties, the use of which provides high organoleptic characteristics and preservation of the color of food products after their heat treatment, to reduce the complexity of the technology, as well as the cholesterol content in food products by replacing the fatty phase of animal origin with vegetable solvent fat.
