FIELD: food, chemical and pharmaceutical, cosmetic, and medical industry.

SUBSTANCE: invention relates to seaweed processing procedure and may be used in food, chemical and pharmaceutical, cosmetic, and medical industry. Method includes soaking the raw material in water at a temperature of 35÷40°C for 12 hours, washing the algae mass, the algae mass acid treatment using organic acid solution, washing the algae mass, performing alkaline hydrolysis in the water extract followed by continuous homogenization, neutralizing by means of food acid, performing pasteurization, after soaking the raw material in water, the algal mass is separated, washed and pressed and the water extract is filtered, the acid extract is additionally separated and neutralized to PH 5.5÷7.5 with subsequent formed salts purification after acid treatment, the washed algal mass is mixed with the purified neutralized acid and filtered water extract before performing alkaline hydrolysis, the homogenate is neutralized to pH 4.0÷7.5, after which the mixture is cooled and subjected to enzymatic hydrolysis. Enzymatic hydrolysis is performed by means of enzymes of the hydrolase class.

EFFECT: invention provides for increasing the extraction of biologically active substances from brown seaweed in order to obtain a maximally enriched brown seaweed-based product with an increased energy value of the product due to enzymatic degradation of polysaccharides and formation of monosaccharides, such as glucose, with a high energy value.
