FIELD: food and baking industry.
SUBSTANCE: group of inventions is related in particular to production of bakery products from wheat and rye flour with the addition of a plant complex enriched with polysaccharides. The plant complex enriched with polysaccharides contains 1.5-2.2% by weight of proteins and is obtained by extracting flax seeds with water with constant stirring at room temperature at a mash ratio of 1:5-8 until a thick mucus substance is formed, followed by separation of gum from flax seeds and drying after separating the gum from the seeds. The method for production of wheat and rye-wheat bakery products includes kneading dough from flour, drinking water, food salt, microbiological baking powder and the above plant complex enriched with polysaccharides. At the same time, the plant complex enriched with polysaccharides in form of dried gum of flax seeds is added in an amount of 0.5-2.5% by weight of the flour.
EFFECT: invention allows to expand the range of additives for bakery products; improve the physicochemical and quality characteristics, as well as the organoleptic characteristics of wheat and rye-wheat bakery products.
