FIELD: meat processing.

SUBSTANCE: invention relates to hand tools for tenderizing meat. The tenderizer consists of an electromechanical reciprocating drive, a hammer, the working part of which is equipped with spikes, and a rod is attached to the non-working part. At the end of the rod opposite from the hammer, there is a shank, the shape of which is intended for connection with an electromechanical reciprocating drive. Between the hammer and the shank, a stop is made on the surface of the rod, under which a spring is installed in the direction of the hammer. The spring is pressed against a bushing with an axial hole in which the stem is located. The outer surface of the sleeve is provided with at least three supports. The axial opening of the sleeve is provided with cuffs along the edges. At the ends of the supports, elastic clamps are made, in which a disposable membrane and a ring are rigidly fixed. The surface of the ring is completely covered with a disposable membrane.

EFFECT: reducing the complexity of sanitizing the parts of the device after its intended use by completely eliminating direct contact of the processed meat with the parts of the device and eliminating the ingress of metal particles and lubricant on the meat and the outer surfaces of the device.
