SUBSTANCE: tenderizer is characterized by that it contains cutting elements 3 in the form of elastic rods fixed on bearing plate 4, forming a one-piece non-separable detachable part, which is attached to the output axis of vibration drive 1 of manual renovator 2, wherein cutting elements 3 in the form of elastic rods are flatly sharpened on one side, the edge of the blade of which is perpendicular to the longitudinal axis of the elastic rods, note here that bearing plate 4 accommodates hollow replaceable casing 5 with different rib height.
EFFECT: invention allows to increase the liquid ingredients distribution uniformity in the meat layer, to reduce the liquid ingredients distribution time in the meat layer and to accelerate biochemical processes, as well as to preserve integrity and configuration of a piece of meat.
