SUBSTANCE: the invention can be used to create biologically active food supplements, as well as for the manufacture of liposomal forms of the drug for encapsulation. A method for producing egg lecithin characterized in that the yolk matrix obtained after extracting the valuable biologically active component IgY is used as a raw material, which is treated with a 6-fold volume of acetone, kept under constant stirring for 1 hour, filtered, and the precipitate is additionally treated with 96% ethyl alcohol heated to 50°С in a ratio of 1:5, the mother acetone-alcohol solution is separated by filtration and evaporated 5-10 times on a rotary-film evaporator to obtain a miscella, distilled water is added to the resulting miscella to precipitate lecithin in the form of a dense yellow-creamy precipitate.
EFFECT: invention makes it possible to extract the yolk matrix from the lipid-protein mass, which is a semi-product of the filtration stage, by spontaneous thawing at room temperature of the yolk suspension, and also to reduce its destruction.
