SUBSTANCE: method for producing fractional lecithin from caviar raw materials, characterized in that it includes extraction of crushed caviar raw materials with acetone at a temperature of no more than 40°C in a ratio of 1:4, holding for 24 hours, filtering and drying the solid phase, extracting the resulting dry concentrate with ethanol at a temperature of 60°C for 24 hours, filtering the resulting extract, evaporating on a rotary evaporator, then distilled water is added to the resulting concentrated extract in a ratio of 1:2, after which the resulting mixture is evaporated on a rotary evaporator and dried to a paste.
EFFECT: making a high-quality lecithin comprising polyunsaturated fatty acids from processing waste of small fish species, while reducing its cost.
