FIELD: food industry.
SUBSTANCE: method is proposed for the production of dried potato cobwebs in the form of narrow long fast-cooking strips, which includes washing potatoes, inspecting them, calibrating, peeling, cutting, washing with cold running water to remove starch, blanching, cooling with cold running water, removing moisture from the surface with air flow at a temperature no more than 40°C and drying, at a temperature in the thickness of the product not higher than 55°C, by blowing the drying agent through the product layer to the final moisture content. Potatoes are cut into narrow long strips with a cross section of 4 to 9 mm2 and a length of more than 40 mm, blanched in boiling water for 3 to 5 minutes, dried to obtain the final product with a moisture content of 10-12%.
EFFECT: invention provides reduction of energy consumption, recovery and cooking time, increase of production efficiency.
