SUBSTANCE: method for the production of tartlets with the addition of eggplant vegetable powder is characterized by the fact that salt, white sugar, table margarine 85%, dissolved in whole milk 3% melange, sour cream 10%, are added to the first part of wheat flour in the amount of 50% of the total mass of flour, the mass is kneaded for 3-5 minutes, after which it is introduced into a mixture of the second part of flour in an amount of 50% of the total mass of flour and eggplant vegetable powder, to obtain a test semi-finished product, it is moulded and baked, followed by cooling of the resulting product and packaged. All components are taken at a certain ratio.

EFFECT: invention makes it possible to create a method for production of tartlets with addition of vegetable powder without the use of various technical additives and to obtain edible dishes (tartlets) with increased organoleptic characteristics, with improved physical and mechanical properties, as well as to expand the range of functional bakery products.
