FIELD: confectionery industry.
SUBSTANCE: proposed chewy candy composition contains a non-cariogenic sweetener, which is erythritol, a taste-improving agent, which is sucromalt, fat and a gel-forming agent. The chewy candy composition contains from 75 to 90% by wt. of the taste-improving agent and the non-cariogenic sweetener per dry matter. The ratio of the taste-improving agent to erythritol per dry matter is from 1.3:1 to 2.5:1. A method for the production of chewy candies is also proposed.
EFFECT: invention is aimed at the prevention of uncontrolled crystallization and grainy texture of excess erythritol and provision for chewy candies of the required texture, aroma delivery, sweetness and fluidity, while achieving non-cariogenic properties of a confectionery product.
