FIELD: confectionery industry.
SUBSTANCE: method for production of a confectionery product with filling provides for preparation of extrudable material of a shell of the confectionery product, preparation of a filling composition. The filling composition contains 55-95% of xylite, 3.5-35% of at least one additional sugar and/or polyol, other than xylite, and/or mixtures thereof, and 0-30% of water, by weight; or 30-60% of erythrite, 20-50% of at least one additional sugar and/or polyol, other than erythrite, and/or mixtures thereof, and 10-30% of water, by weight. Moreover, the specified composition, when heated, is capable of forming movable liquid. Then, the filling composition is heated to a temperature of at least 70°C to transform it into movable liquid, and the movable filling composition is used to form separate confectionery products with filling. Next, separate confectionery products with filling are directed for self-cooling to a temperature of less than 26°C, during which the filling composition undergoes a phase transition from flowing liquid to crystal solid substance to form a confectionery product including a shell of the confectionery product, at least substantially surrounding crystal filling. A confectionery product with filling is also proposed.
EFFECT: invention is aimed at obtainment of a confectionery product with filling suitable for forming and resistant to leakage due to the formation of a fine-crystal structure, when cooled.
