FIELD: dairy industry.
SUBSTANCE: method for producing a protein supplement from recycled dairy raw materials includes mixing secondary dairy raw materials with a bacterial concentrate, fermentation, filtering and drying. Curd whey is used as a secondary raw material. As a bacterial concentrate, use a concentrate of propionic acid bacteria Propionics or a liquid concentrate of acidophilic lactobacilli Acidophilin+ with an activity of at least 109 CFU/ml, the concentrate is added in an amount of 0.5 wt.% to the mass of the mixture at a temperature of 35°C, and when adding propionic acid bacteria concentrate, fermentation is carried out at a temperature of 37°C for 56 hours, and when adding lactobacilli acidophilus concentrate, fermentation is carried out at a temperature of 40°C for 32 hours, the hydrolyzate obtained after fermentation is filtered twice, first through a filter with a pore size of 8-12 microns, then through a membrane filter with a pore diameter of 0.45 microns and dried in a freeze-drying apparatus at a temperature of minus 40°C to humidity≤ 8%.
EFFECT: creating a final product from recycled dairy raw materials with a high protein content and high functional and production properties.
