FIELD: food industry.
SUBSTANCE: invention can be used in production of gelatine. The method for obtaining dry instant gelatine includes obtaining gelatine broth by enzymatic acid hydrolysis of raw cattle bone, followed by neutralization, filtration and extraction of gelatine broth at a temperature of 55-60°C with a solid content of 12-15%. After that, the gelatine broth is subjected to spray drying at a spray drying installation with adjustable solution feed rate to the spray nozzle and the feed rate of the spray gas-air flow at a temperature of 100 to 110°C, the rate of supply of gelatine broth to the installation from 8 to 12 mL/min and the rate of supply of the atomizing gas flow from 10 to 20 m3/h to obtain the target product with a particle size of 9-11 mcm.
EFFECT: invention is aimed at obtaining dry instant gelatine with a particle size of 9-11 microns.
