FIELD: food industry.
SUBSTANCE: invention can be used in production of gelatine. Disclosed method of producing gelatine involves hydrolysis of bone material with a solvent, water extraction of gelatine and drying the obtained gelatine broth. Solvent contains an enzyme pepsin of microbial origin with enzymatic activity of 40 units per 1 gram of raw material in hydrochloric acid HCI 1M. Ratio of the weight of the starting material to the volume of solvent is 1:9. Hydrolysis is carried out for 180 minutes at temperature of 27±2 °C and pH of medium of 1.5–2.0.
EFFECT: invention provides output of gelatine of 12_1 % of weight of initial raw material and allows to reduce technological stage of demineralization, liming and deashing to 180 minutes.
