FIELD: food industry.
SUBSTANCE: dry lactulose production method involves solution drying with lactulose weight fraction equal to 40% using a spray drying installation at drying temperature equal to 130-140°C at a rate of the solution delivery into the installation equal to 10-15 ml/min, air flow rate being 15-25 m3/h.
EFFECT: invention allows to increase lactulose content in the ready product and obtain lactulose with stable quality indices and long storage life.
