SUBSTANCE: invention relates to the method of obtaining a biologically active protein-polypeptide hydrolyzate from the fresh brain of slaughter animals. A method of obtaining a biologically active protein-polypeptide hydrolyzate from a fresh brain of slaughter animals, including rapid cooling of the brain of slaughter animals for 1–2 hours at a temperature of minus 10°C and air circulation speed of 1–2 m/s to the temperature on the surface of the tissue of 1–2°C and in thickness up to 16–18°C, at the second stage, the brain is cooled down for 6–8 hours at an air temperature of minus 1–1.5°C to core temperature of 2°C, the cooled brain is left at a temperature of 4°C during the day for exposure, followed by grinding and homogenization of tissues with the addition of 1% sodium chloride solution in a ratio of 1:1 and the addition of sodium hydroxide to pH ~7, the resulting mixture is kept for a day at a temperature not higher than +6°C, filtration is carried out through medical gauze or cambric to separate dense insoluble brain residues, the filtrate is separated into fractions with separation of the upper lipid layer and settling of fine dense insoluble brain residues, decanted, followed by ultraviolet treatment using a low-pressure discharge U-shaped lamp with a wavelength of λ=253 nm with a rate of passing the solution through a quartz tube of 50 ml per minute, at the last stage, shock freeze drying is carried out at deep freezing.
EFFECT: above invention allows to increase the yield of the protein-polypeptide complex in the final solution, increase its activity and improve its quality characteristics.
