SUBSTANCE: invention relates to a method for the synthesis of pyruvic acid or its salt, including (a) dehydration of the starting compound in the form of glucaric acid or its salt, or a stereoisomer of glucaric acid or its salt, with the formation of a dicarbonyl intermediate compound 2-keto-3-deoxyglucaric acid or a salt thereof, or a stereoisomer of 2-keto-3-deoxyglucaric acid or a salt thereof by converting the alpha hydroxy group to a second carbonyl group and removing the beta hydroxy group, and (b) cleaving the dicarbonyl intermediate to give pyruvic acid or a salt thereof.
EFFECT: method for the synthesis of pyruvic acid or pyruvate from substrates that are obtained from renewable carbohydrate resources.
