FIELD: food industry.
SUBSTANCE: method for production of bakery products based on a mixture of prime grade wheat flour, sesame flour and dietary wheat bran involves kneading dough by mixing a flour mixture and recipe components, dough fermentation, dough pieces moulding, their finishing, proofing, baking and cooling of products. Flour mixture contains high-grade bakery wheat flour in amount of 75.0-90.0 wt.%, sesame flour in amount of 5.0-15.0 wt.% and dietary wheat bran in amount of 5.0-10.0 wt.%. Recipe components are used at the following ratio of the total amount of the mixture of prime grade wheat flour, sesame flour and dietary wheat bran, wt.%: pressed bakery yeast – 1.5-5.0, edible salt – 1.0-2.0, drinking milk – 50-60, sea-buckthorn puree – 5-15 and drinking water – as per calculation.
EFFECT: invention makes it possible to produce bakery products of preventive purpose, characterized by high content of protein, food fibres and β-carotene.
