FIELD: wine industry.
SUBSTANCE: invention relates in particular to the field of quality control of wine materials and sparkling wines. A device for determining the foaming ability of wine materials and sparkling wines includes a cylinder, in the lower part of which a porous glass membrane is rigidly fixed, under which there is a pipe for supplying bubbling gas, to which a cylinder with bubbling gas is hermetically connected through a system for supplying and regulating the gas flow, and outside the cylinder a foam column height meter connected to a computer is attached. In this case, the cylinder is equipped with a thermostating system, the system for supplying and regulating the flow of bubbling gas contains a pressure sensor and a flow meter connected to a microcontroller connected to a personal computer, and the foam column height meter is made in the form of a laser sensor located above the cylinder and connected to the computer. The device is used to implement a method for determining the foaming ability of wine materials and sparkling wines.
EFFECT: group of inventions makes it possible to reduce the consumption of bubbling gas, reduce measurement time and increase measurement accuracy.
