FIELD: food industry.

SUBSTANCE: following is proposed: a method of obtaining a complex of water-soluble peptides by acetic acid extraction of raw materials. Epidermal mucus of the African catfish Clarias gariepinus, selected from fresh or frozen fish, is used as a raw material, and 3÷4 times the volume of 3 wt.% acetic acid solution containing 0.1÷0.3 wt.% of an inorganic salt selected from CaCl2, MgO2, FeCl3, MgSO4, FeSO4 is used as an extractant. Extraction is performed in ultrasonic cavitation treatment mode for 15÷20 min at the temperature of +4°C and continue with constant stirring for 24 to 48 hours with regular cavitation treatment for 10 minutes every 10÷12 hours, then the supernatant is separated by centrifugation and processed for 5÷ 10 hours at the temperature of +4°C an inorganic sorbent used as activated carbon, taken in an amount of 0.5% by weight of the mass of the extract. The spent sorbent is separated by filtration or centrifugation, and the resulting transparent filtrate is evaporated under vacuum at a temperature of +4÷ 10°C until its volume is halved and then processed with 1.2÷2-fold excess of acetone and left for another day at a temperature of +4°C for complete precipitation of peptides.

EFFECT: method makes it possible to obtain a complex of water-soluble peptides with a molecular weight from 350 to 9,000 Da without impurities of high-molecular proteins, containing all essential amino acids and having high antioxidant activity, from the epidermal mucus of the African catfish Clarias gariepinus.
