FIELD: food industry.
SUBSTANCE: method of preparing a product such as tofu cheese from the kernel of industrial hemp seeds is proposed. The seeds are cleaned, washed, ground in an aqueous medium, the liquid phase is separated from the insoluble residue, a protein clot is precipitated from the liquid phase when heated, the kernels of industrial hemp seeds are ground, the grinding is carried out in three cycles, before the first cycle the kernels are filled with water and crushed, the liquid is separated phase — hemp milk, collect it in a container, perform the second and third cycles, for which the filtered suspension is again filled with water, crushed and separated the liquid phase, then the operations are repeated, the okara is stored, and the liquid phase is hemp milk obtained as a result of grinding and separation in all three cycles, heat to a boil, then a coagulant is added, boiled for 2–3 minutes until the protein coagulates, left to cool for 3–4 hours, the resulting mass is filtered on a sieve with small holes, a load is placed on the resulting clot or pressed to a dense consistency, then cooled to a temperature of +2°С to +6°C.
EFFECT: invention makes it possible to expand the range of possible types of high-value raw materials for obtaining high-protein products such as tofu cheese and, as a result, increasing the nutritional value of the final products.
